Cooking with my daughter and her friend today was such a delight. The kids measured, mixed, and followed a recipe, turning the kitchen into a fun and educational playground. Watching them boost their math, science, and reading skills in the process was incredibly rewarding.
Seeing them experiment with flavors and the sense of accomplishment when they completed the dish truly boosting their confidence, and the joy on their faces while making sweetcorn fritters was priceless. It's a lovely reminder of the value of spending quality time with the young ones.
6 - 8 fritters
500g sweetcorn (1 large tin) 1 cup/120g all purpose flour 1 tsp baking powder 1 tsp smoked paprika 1/2 tsp salt 2 eggs 1/2 cup/120ml milk 2 spring onions finely sliced 1/2 cup/50g grated cheese Vegetable oil for frying.
Combine the sweetcorn, flour, baking powder, and seasoning.
Add the eggs, milk, spring onions, and cheese.
Mix to form a thick batter.
Heat a tablespoon of oil in a frying pan, and carefully spoon in the mixture. Try to form a circle, pressing down to help it hold shape.
The fritters will turn golden and crispy within about 3 minutes. Gently turn the fritters over to repeat the process.
